About us
We don't follow recipes to the letter: we research, reinterpret, and connect local ingredients with techniques that cross borders. We work with producers who know the land and transform each season into edible stories.
What others discard, here becomes ferments, stocks, and pickles that add new chapters.
Our cuisine
At deIndias, there’s no fixed map: the menu changes with the season, with whatever comes in fresh from the fields, the sea, or the street. We’re driven by curiosity and by the belief that the best is found close if you know where to look.
Some dishes are born from memories, others from encounters. We cook intuitively, seeking to ensure that each flavor connects with those who taste it.

Our chef
José Alfredo “El Chato” Barbosa began telling stories with words and ended up doing so with fire and knives.
Trained in Social Communication and seasoned in European kitchens, he returned to Colombia to cook from what we are. At deIndias, his cuisine blends technique, memory, and authenticity, weaving flavors together like someone writing chronicles.
